Simple & Healthy Breakfast Recipes
Sometimes we forget about the simple recipes that are not only really tasty but are healthy too!
Avocado Toast
Ingredients:
2 slices of whole-grain bread
1 ripe avocado
Juice of 1/2 lime
Salt and black pepper to taste
Toppings of choice (optional)
Directions:
Toast the bread until golden and crispy.
Slice the avocado in half, remove the pit, and scoop out the flesh with a spoon. Mash it with a fork or blend it in a food processor for a creamy texture. Add juice from half a lime and season with salt and black pepper to taste.
Spread the mashed avocado onto each slice of toast and top with desired toppings like tomatoes, feta cheese smoked salmon, or poached eggs (if using).
Apple Peanut Butter Toast
Ingredients:
2 slices of your favorite bread
2 tablespoons of creamy peanut butter
1 apple, sliced
Honey, to taste (optional)
Directions:
Toast the bread until golden brown. Spread 2 tablespoons of peanut butter on each slice of toast.
Arrange the slices of apple on top and drizzle with honey if desired.
Egg and Cheese Sandwich on an English Muffin
Ingredients:
1 English muffin
1 egg
2 slices of cheese
Salt & pepper, to taste (optional)
Butter or oil, for greasing the pan (optional)
Directions:
Heat a nonstick pan over medium heat and lightly grease with butter or oil. Crack open the egg into the pan and cook until the whites are set. Flip over the egg so that both sides are cooked through. Remove from the pan onto a plate.
Toast your English muffin halves until lightly browned. Place one slice of cheese onto each half and top with the cooked egg. Sprinkle with salt and pepper if desired.
Top each half with the other slice of cheese and place in a preheated oven at 350°F for 2 minutes or until the cheese is melted.
