Healthy Banana Pancakes

Ingredients:

1 ripe banana

2 eggs

2 tablespoons of maple syrup (optional)

1/2 teaspoon of baking powder

Toppings of choice (optional)

Directions:

In a bowl, mash the banana using a fork. Add in the eggs and mix everything together until combined.

Add in the maple syrup (if using). Then add the baking powder and mix until everything is well blended.

Heat a nonstick pan over medium heat and lightly grease with butter or oil. Drop about ¼ cup of batter into the pan for each pancake and cook for about 3 minutes on each side or until golden brown.

Top your pancakes with desired toppings like nut butter, fresh fruit, yogurt, or honey (if desired). Enjoy!
