Fried Rice with Beef

Recipe For Chinese Fried Rice with Beef

Ingredients:

2 Tbs. soy sauce

1/2 tsp. sugar

1 Tbs. vegetable oil

2 eggs, well beaten

1/2 lb. ground beef (or substitute other protein)

1 medium carrot, finely chopped

1 celery rib, finely chopped

1 scallion, chopped

1 tsp. fresh ginger, minced

1 clove garlic, minced

2 cups cooked rice, cold

Directions:

In a medium bowl, whisk together soy sauce, sugar, salt, and pepper to taste. Set aside.

In a large nonstick skillet, heat 1 tablespoon of oil over medium-high heat. Cook the eggs for 45 seconds, stirring continuously until they are just set. Set eggs aside in a bowl.

In the same pan on medium heat, add ground beef and the next 3 ingredients. Saute for approximately 3 minutes, until browned. Add in ginger and garlic and cook for 1 minute more, stirring well. Drain excess fat. Increase heat to high and add the rice.

Stir-fry for about 1 minute, until heated through. Stir in soy sauce mixture and eggs and stir-fry 30 seconds longer.
